Dairy-Free Plum Watermelon Yogurt Popsicles

A delicious naturally sugar-free, dairy-free easy to make popsicle perfect for any age! (Also gluten-free, paleo, no refined sugar added, nut-free and vegan)

Ingredients
  • 1 cup of Anita's Coconut Creamline Dairy-Free Yogurt
  • 1 cup filtered water
  • 4 drops liquid Stevia (I like Nu Naturals Stevia)
  • 2-3 cups chopped watermelon (white pits only, remove black pits)
  • 2 small plums chopped with skin
  • My favorite popsicle mold that I could never live without (that comes with the sticks)
Instructions
  1. In a blender, combine the yogurt, water and stevia and blend till mixed well.
  2. Cut watermelon pieces ⅛ inch - ¼ inch thick and set aside.
  3. Cut plums into small chunks.
  4. Pour mixture into a measuring cup and pour a small amount of the mixture into each popsicle mold, about ⅛ - ¼ full. Then add a few pieces of each fruit into the mixture and push down with your fingers until the yogurt mixture covers the fruit.
  5. Then pour another ⅛ - ¼ cup of mixture into the mold and again add a few pieces of each fruit into the mixture and push down with your fingers until the yogurt mixture covers the fruit.
  6. Repeat step 5 until each mold is full. What this will look like is yogurt mixture, fruit, push down, yogurt mixture, fruit, push down and repeat until the mold is full.
  7. If you use the popsicle mold I love, it will come with a lid with slits for the popsicle sticks and the actual popsicle sticks. Cover the mold with the lid, and add the popsicle sticks and freeze overnight.
  8. The following day, remove the mold from the freezer and run it under hot water, until you can loosely remove the lid. Continue to run the mold under hot water until the popsicles can pop out of the molds easily.
  9. Store the popsicles in a freezer ziplock bag in the freezer for up to 6 months.
Notes
If you can't find Anita's Coconut yogurt you can sub in unsweetened dairy yogurt, unsweetened Greek dairy yogurt, or unsweetened Soy yogurt. If you can't use plum, then you can sub in any super tart fruit like Raspberries, Blackberries, Strawberries or Kiwi. Grapefruit does not work!
