Superfood Papaya Boats {Vegan, Paleo, Nut-Free}

Ah papayas. A glorious perfect fruit. And when in season its flesh is filled with flavor and so sweet, it tastes like cotton candy! Healthy cotton candy that is : ) Add your favorite toppings and you've got the best breakfast or healthy snack! This snack is vegan, dairy-free, nut-free, sugar-free, paleo and of course naturally gluten-free!
Serves: 2
  • 1 ripe papaya
  • Dairy-free coconut yogurt {I use Anita's Coconut Creamline Vegan Yogurt}
  • Chia seeds
  • Hemp seeds
  • Peeled and sliced TigerNuts { I used Organic Gemini}
  1. Cut the each end of the papaya and cut in half using a large sharp knife
  2. Scoop out the seeds with a spoon and discard seeds
  3. Fill each half with coconut yogurt or yogurt of choice and all toppings. Use as much as you want, and add whatever you want like dried fruit, seeds, nuts, other superfoods, gluten-free oats and even fresh fruit.
For the nuts and seeds I use gluten-free section because they are measured at 5ppm and are certified gluten-free.
