Healthy Acai Cocoa Beet Smoothie {Vegan, Paleo, Nut-free, Sugar-free}

Gluten-free, paleo, vegan, soy-free, corn-free, banana-free, nut-free (uses coconut), avocado-free, dairy-free, sugar-free.
Serves: 1
  • 1⅓ cup raw frozen zucchini (half peeled, half with skin)
  • 5 slices raw frozen beets (about ⅛-1/4 inch slices)
  • A small handful of frozen cherries
  • 2 T. chia seeds
  • 1 T. ground flax seeds
  • 2 T. Acai powder ( I used Healthy Truth)
  • 1 T. cacao or carob
  • 2 drops liquid stevia
  • ½ cup lite culinary coconut milk
  • 1 cup water
  • 1 cup ice
  • Additional superfood boost: 1 T. hemp seeds
  • Toppings: Cherry Square Bar & Cacao Nibs
  1. In a highspeed blender first add the zucchini, lite coconut milk, and water, and blend till well mixed.
  2. Then add all other ingredients (except the ice) and blast on high till blended.
  3. Add the ice, blend again and serve.
  4. To make it extra thick freeze for 20 minutes.
  5. Serves 1 16 oz smoothie
I used So Delicious Lite Culinary Coconut Milk (can be bought online, sold at whole foods too) // If you don't have cacao, you can use cocoa - just increase the amount by ¼ tsp. // You can use regular plant-based milk or any milk of choice for this recipe. Simply swap it //
