Mint Gelato Smoothie {df, nf}

This ultra dreamy, and creamy Mint Gelato Smoothie is irresistible with a healthy combination of leafy greens, mint, and cantaloupe melon.  It’s vegan, and dairy-free too and it’s like having a milkshake for breakfast!

Equipment

  • high-speed blender
  • Grinding machine or hammer

Ingredients

  • ¾ cup mache rosettes or romaine lettuce organic
  • ¾ cup soy milk
  • 1 ½ cup chopped cantaloupe
  • 1 tablespoon hemp seeds
  • ½ medium-sized avocado ripe
  • 1-2 tablespoon raw cacao nibs
  • 3 large fresh mint leaves organic

RIM OF GLASS CRUST

  • 1 tablespoon hemp seeds to add to rim of glass
  • 1 ½ tablespoon gluten-free rolled oats to add to rim of glass
  • 2 tablespoon agave syrup or date syrup to add to rim of glass

Instructions

CRUST

  • In a high-speed blender, or grinder pulse the gluten-free oats, and hemp seeds together for a few seconds. Set that mixture aside.
  • Coat sides, and rim of glass in agave syrup. Roll in oat/hemp seed mixture and freeze glass getting as much of the coating as possible and then freeze glass for 10 minutes.

SMOOTHIE BASE

  • In a high-speed blender combine all ingredients except ice, mint, cacao nibs, and crust ingredients and blast on high until well blended.
  • Then add mint leaves (a few extra if you desire) and cacao nibs and blast again till mint particles have dissolved. Note that the cacao nibs will not dissolve because they are meant to taste like chocolate chips texture in the smoothie.
  • Add 1 cup of ice and blast again.
  • Freeze for 30 minutes, and then enjoy with a spoon or a straw.

Notes

  • Quinoa milk and hemp milk work really well for this smoothie too!
  • So do cashew milk, hemp milk, and homemade coconut milk.
  • You can definitely add more mint leaves if you are a mint lover.
  • And you can definitely omit the cacao nibs if you don't want chocolate chip chunks in your smoothie
  • Too thick?  Add more water.
  • Too thin?  Add more avocado.
