Pitaya Dragon Fruit Milk {df, vegan, paleo}

Ingredients

Coconut Milk Ingredients

  • 4 cups shredded coconut unsweetened
  • 4 cups water bottled or filtered
  • 2 tsp. lemon juice fresh-squeezed

Pitaya Dragon Fruit Puree Ingredients

  • ½ package dragonfruit froze pack
  • cup strawberries frozen
  • cup raspberries frozen
  • 4 shots optional for a kick: vodka top shelf / gluten-free

Instructions

Coconut Milk Instructions

  • Pour 4 cups of shredded coconut into a high-speed blender along with 4 cups of water and blast on high until well blended.
  • Over a large bowl strain the milk with a nut-milk bag or cheesecloth. Do this straining in sections as it will be too hard to strain it all at once.
  • Once fully strained add the fresh lemon juice and stir.
  • Set strained mixture aside. Also, keep the pulp and put it in a container and set that aside.
  • Do not rinse the blender.

Pitaya Dragon Fruit Puree Instructions:

  • In the same un-rinsed blender, add the dragon fruit, the strawberries, raspberries and a few tablespoons of water. Water needed may vary on the speed on your blender.
  • Blast the mixture on high till well blended. The mixture will be thick. Do not blend it to the point of a liquid. You want some pulp.
  • Once blended pour into a cup and set aside.

How to assemble:

  • Take out four small glasses/cups. Add one or two ice cubes to each cup.
  • Pour about ¼-1/2 cup coconut milk into each cup.
  • Add 2 teaspoons of coconut pulp to each glass. Pulp is optional.
  • Add 1 heaping tablespoon of dragon fruit mixture to each glass.
  • No need to mix it. It will do its own thing and settle where it settles. It will become random layers of unicorn pink/purple and white! Meant for sipping the goodness.
