Sunbutter Superfood Jam Toasts

These healthy gluten-free crispy toasts have legit plant-based superfood toppings to give you a hearty satisfying snack or quick lunch!  These toasts hit the spot, always! Dairy-free, vegan, nut-free too!

Ingredients

  • 5-8 slices Buckwheat Crispy toast gluten-free
  • 2 ½ tablespoon Sunbutter {Sunflower seed butter} or your nut butter of choice
  • 2 teaspoon coconut oil melted
  • 4 teaspoon roasted watermelon seeds white seeds only
  • 1 teaspoon chia seeds
  • 1 tablespoon hemp seeds
  • ½ cup raspberries frozen
  • cup spring water

Instructions

  • Combine coconut oil and Sunbutter into a small microwavable bowl and heat for 20-second intervals or until warmed.  Max 1 minute.  Mix well to make it a creamy spread.
  • Add 2 teaspoons of watermelon seeds into Sunbutter mixture and mix well.
  • Spread Watermelon Seed Sunbutter mixture onto each toast.
  • Then sprinkle all toppings: hemp seeds, chia seeds, and remaining watermelon seeds as needed.  Set aside.
  • In a microwavable bowl warm up ½ cup raspberries with water.  Cover with a paper towel and heat for 30 seconds intervals, or until warmed and predominantly melted.  Remove from heat and let cool for 3 minutes.
  • Dip or spread raspberry puree onto each toast with extra for more dipping.
  • Enjoy immediately.

Notes

I adore the gluten-free dedicated brand Le Pain De Fleurs.  These crispy toasts look like carboard, but it's all about the toppings that make these crackers ROCK! // As for Sunflower seed butter I like to use the brand Sunbutter or Once Again.  // I prefer to use organic whenever possible and I hope you do too. //  My favorite brand for watermelon seeds is Go Raw.  They heat their seeds at a very low temperature so that the nutrients stay intact as much as they can.  And what that means for us?  More nutrients that our bodies need.  These are a bit pricey but they last a long time.
