Superfood Apple Nachos {Vegan, Paleo, Nut-Free, Sugar-Free}

Superfood Apple Nachos.  Sliced apples with smooth and creamy hemp seed butter and a crunchy base and healthy superfood toppings that look like sprinkles.  A healthy and delicious snack for any time of the day!  Naturally Gluten-Free, Dairy-Free, Sugar-Free, Vegan, Paleo & Whole 30 approved.

Ingredients

  • 1 whole Granny Smith apple
  • 1 cup hemp seeds not soaked
  • 2 teaspoon coconut oil solid or melted
  • 3 drops liquid stevia I like Nu Naturals
  • 1 pinch pink Himalayan salt or sea salt
  • 1-2 tablespoon chia seeds

Instructions

  • In a food processor, add all hemp seeds and process until semi creamy.  This can take about ten-20 minutes depending on the strength of your food processor.
  • Then add coconut oil one teaspoon at a time, stevia and salt into the food processor and process until you get your desired creamy consistency.  Use a kitchen spoon to measure coconut oil not measuring spoons.  This means be generous with your coconut oil.
  • Cut your apple into slices with the skin on.
  • Using a disposable pastry bag cut the tip at a slanted angle, spoon the hemp seed butter mixture into the pastry bag and pipe the hemp seed butter onto the apples.  If you don’t want to use a disposable pastry bag, simple spread the hemp seed butter onto your apples with a spoon or a knife.
  • Top apples with a generous sprinkle of chia seeds.

Make sure your superfoods are certified gluten-free if you are gluten-sensitive or celiac.
