Superfood Papaya Boats

Superfood papaya boats with loads of topping options! Pack your fruit with unsweetened coconut yogurt and enjoy this healthy dairy-free, paleo breakfast.  This breakfast is also gluten-free, whole 30 compliant, and sugar-free.

Ingredients

  • 1 large papaya, large
  • 2 cups dairy-free coconut yogurt
  • 2 tablespoon chia seeds
  • 2 tablespoon hemp seeds
  • 3 tablespoon peeled Tiger Nut slivers or almond slivers

Instructions

  • Slice the ripe papaya in half with a knife.
  • Remove and discard papaya seeds.
  • Fill each half of papaya with coconut yogurt or yogurt of choice and an equal amound of all toppings.  Use as much as you want, and add whatever you want like dried fruit, seeds, nuts, other superfoods, gluten-free oats and even additional fresh fruit.

For the nuts and seeds, I use Nuts.com gluten-free section because they are measured at 5ppm and are certified gluten-free. //  For Tiger Nuts my favorite brand is I used Organic Gemini // I also use Anita's Coconut Creamline Vegan Yogurt
