I haven't used food dye since 2013-14ish and I do miss making rainbow goodies. But guess what? Enter the knowledge that we can bake rainbows by simply using mother natures natural foods as a food dye.

Pitaya Dragon Fruit, Strawberries and Raspberries all make an excellent pink / purple color that is out of this world and shows up in this dazzling color in frostings, milk, drinks, smoothies, waffles, and more. Dragon Fruit aka Pitaya is a good source of magnesium which helps your muscles relax, promotes healthy sleep and promotes a healthy gut.
Raspberries high levels of Vitamin C and manganese while having smaller amounts of many vitamins and minerals such as Vitamin K, Copper, Potassium, B vitamins, and Vitamin E. Raspberries are very low in sugar.
Strawberries are a good source of antioxidants (prevents radical aging, and is an immune booster), Folate (B9), Potassium, Manganese, Vitamin C. Strawberries are very low in sugar.
Coconut milk has a lovely source of Iron, Magnesium, Potassium, Selenium, and Copper. Made from 94% water, and if eating the pulp plenty of fiber.

I was so excited to make this with my nephew! In fact, it was a complete collaboration. I wanted dragonfruit he wanted berries. A masterpiece was born. When my nephew and I cook and bake together I see so much joy in the process. We are both teaching each other throughout the process. Parents, I urge you to allow your children to help make the desserts, the food, the smoothies. When they partake in the making they also partake in eating/drinking because it is something they had a hand in creating.
Until I learned about holistic nutrition I knew no other way to bake rainbow goodies without food dye. To my surprise, there are so many ways to do this naturally and not harm your body with chemicals. Because it's the chemicals in food dyes that harm us.
After years of mystery symptoms, we realized this was also something that should not be in our diets - food dyes. They make me feel irritable and high on what feels like sugar. It messes with your body and your mood. Do you ever notice this?
Luckily this milk is not only so fun to make but super delicious for the whole family, even a toddler! Now that's a score!

Pitaya Dragon Fruit Milk {df, vegan, paleo}

Ingredients
Coconut Milk Ingredients
- 4 cups shredded coconut unsweetened
- 4 cups water bottled or filtered
- 2 tsp. lemon juice fresh-squeezed
Pitaya Dragon Fruit Puree Ingredients
- ½ package dragonfruit froze pack
- ⅛ cup strawberries frozen
- ⅛ cup raspberries frozen
- 4 shots optional for a kick: vodka top shelf / gluten-free
Instructions
Coconut Milk Instructions
- Pour 4 cups of shredded coconut into a high-speed blender along with 4 cups of water and blast on high until well blended.
- Over a large bowl strain the milk with a nut-milk bag or cheesecloth. Do this straining in sections as it will be too hard to strain it all at once.
- Once fully strained add the fresh lemon juice and stir.
- Set strained mixture aside. Also, keep the pulp and put it in a container and set that aside.
- Do not rinse the blender.
Pitaya Dragon Fruit Puree Instructions:
- In the same un-rinsed blender, add the dragon fruit, the strawberries, raspberries and a few tablespoons of water. Water needed may vary on the speed on your blender.
- Blast the mixture on high till well blended. The mixture will be thick. Do not blend it to the point of a liquid. You want some pulp.
- Once blended pour into a cup and set aside.
How to assemble:
- Take out four small glasses/cups. Add one or two ice cubes to each cup.
- Pour about ¼-1/2 cup coconut milk into each cup.
- Add 2 teaspoons of coconut pulp to each glass. Pulp is optional.
- Add 1 heaping tablespoon of dragon fruit mixture to each glass.
- No need to mix it. It will do its own thing and settle where it settles. It will become random layers of unicorn pink/purple and white! Meant for sipping the goodness.
