I never ever thought to make nachos with apples! There was a time when I didn't think I'd ever been able to bring apples back to my diet after a terrible food sensitivity that wouldn't heal. For two years I couldn't even eat apples without having a food sensitivity facial numbing reaction to half my face, lips, and throat. After 2014, apples were out! It was so sad because I LOVED the apples. I used to eat them daily. But like many of my food sensitivities that developed, this one came on so strong and no matter how small of a piece I ate over time, the same reaction would occur. So I gave up and abandoned apples.
When healing leaky gut, autoimmune disease, and chronic inflammation anything can happen in your body. It can go right, it can go wrong, and it can go haywire. You're not a slave to the chaos if you take the time to heal and repair it. 2.5 years later, the apple sensitivity subsided and apples were brought back into my diet.

For this recipe, I used just a few simple ingredients. I stuck with Granny Smith apples because of their super tart flavorful punch, and low sugar content. Green apples are also extra crunchy, and incredibly tart. The crunch factor serves as "the nacho" part of the recipe. And hemp seed butter and chia seeds were my creative toppings to this apple nachos recipe.

My recipe was chosen based on my food sensitivities. However, If you don't like my ingredients, just use my recipe as inspiration to create your own. Use apple as your base, and then choose your nut or seed butter of choice, and your toppings of choice.

Superfood Apple Nachos {Vegan, Paleo, Nut-Free, Sugar-Free}
Ingredients
- 1 whole Granny Smith apple
- 1 cup hemp seeds not soaked
- 2 teaspoon coconut oil solid or melted
- 3 drops liquid stevia I like Nu Naturals
- 1 pinch pink Himalayan salt or sea salt
- 1-2 tablespoon chia seeds
Instructions
- In a food processor, add all hemp seeds and process until semi creamy. This can take about ten-20 minutes depending on the strength of your food processor.
- Then add coconut oil one teaspoon at a time, stevia and salt into the food processor and process until you get your desired creamy consistency. Use a kitchen spoon to measure coconut oil not measuring spoons. This means be generous with your coconut oil.
- Cut your apple into slices with the skin on.
- Using a disposable pastry bag cut the tip at a slanted angle, spoon the hemp seed butter mixture into the pastry bag and pipe the hemp seed butter onto the apples. If you don’t want to use a disposable pastry bag, simple spread the hemp seed butter onto your apples with a spoon or a knife.
- Top apples with a generous sprinkle of chia seeds.
