Chocolate and oranges have become a huge obsession of mine! The combination is truly out of this world. And no I'm not talking artificial orange flavoring with chocolate but a real orange from the trees of mother nature with deliciously dark vegan chocolate. More like chocolate orange nachos. Load on the toppings!
I'm dramatic you think, right? But once you clean out your entire body and eat clean for a number of months/years you'll appreciate flavors and look at them in a whole new light. Think more clarity.
When I was a kid you couldn't pay me to eat chocolate with fruit! It was ghastly! Hahaha, I laugh as I write this because I am picturing my grandma Udith and her love for fruit and chocolate combined. As I got older the idea of delicious juicy fruit with drizzled chocolate became a favorite. When my grandma passed away I swear she passed her love of chocolate-covered fruit over to me.
Picture this: decadent creamy dreamy chocolate dipped into the plump and ripe delicious orange slices sprinkled with superfoods. It's like a boost of sunshine and feel-good vibes all in one bite! And it's all gluten-free, sugar-free, nut-free, and vegan. It's such a good treat! It's one of those treats that is healthy, refreshing, and sweet as balls without the added sugar.
It took more than Celiac Disease to get healthy. When I was diagnosed with Celiac I actually thought I was eating super healthy. Furthermore living with Celiac for 7 years I still thought I ate super healthy. But the way I was eating wasn't healthy enough.
It wasn't until developing bouts of chronic health conditions on top of Celiac like Leaky Gut, SIBO, Candida Overgrowth, Cystic Acne and so much more did I begin to understand that food is not only something that tastes good and makes us full, but it nourishes our body on a soul level. Food is medicine. It was a huge learning experience! That's how I got into this who orange thing. I had to rediscover food.

Chocolate Orange Nachos
Equipment
- microwave or double boiler
Ingredients
- 2 navel oranges, peeled
- ½ cup dark chocolate chips vegan and gluten-free
- 2 tablespoon coconut oil
- 1 tablespoon chia seeds
- 1 tablespoon hemp seeds
Instructions
- Peel oranges and add ½ tablespoon each of chia and hemp seeds in a bowl and set aside.
- In the microwave melt chocolate chips in a microwavable bowl and melt on high at 15-minute intervals {total: up to 1 minute}, mixing along the way. Once melted add the coconut oil and mix well until blended.
- Drizzle melted chocolate all over oranges and add remaining chia and hemp seeds on top.
- Serve immediately using toothpicks.

RECIPE TIPS
- If you can't have chocolate don't fret my pet - use gluten-free carob. That works too! It's not the same as the chocolate I'll be the first to say that, but it satisfies the craving you're looking for.
